Amy’s Mexican Casserole Bowl

After my recent disappointing experience with the texture of an Amy’s frozen product that was microwaved, I baked this one. It took well over an hour to cook, but it did turn out much better. I also added my own cheese on top which also helped.

The casserole was definitely satisfying and only had 380 calories. Still, it didn’t taste as fresh and healthy as I thought it would. In fact, it tasted like cheap frozen Mexican dinners that I’d eaten years ago. Fortunately, the ingredients do not create any guilt because they include organic products and no preservatives.

I probably wouldn’t buy this product again, though, because I’m pretty sure I could make a more flavorful version myself.
